LET'S TALK: FLAVOURS AND FILLINGS

There are oh so many to choose from, but before you decide, bear in mind that if it's a tiered cake you need, each tier can be a different flavoured cake with a different filling.

 

CAKE FLAVOURS 

Most cakes nowadays are sponge type cakes;  even wedding cakes, which many years ago were more like a traditional Christmas cake,  are usually different types of sponge.  This of course doesn't mean to say that fruit cakes are out of the question; it just means that when "building" your cake, we need to keep the heaviest cake on the bottom!  

 

The most requested sponge cake flavours from my clients have been vanilla, lemon and chocolate, but here are some popular alternatives:

  • Red Velvet

  • Luxurious Chocolate (made with chocolate chunks)

  • White Chocolate and fresh Raspberry

  • Lemon and Poppyseed

  • Coffee and Walnut

  • Gingerbread

  • Oreo Cake

  • Salted Caramel

However, options of cake flavour are limitless - the above are those which my clients have chosen to date.  So if your favourite is something like Earl Grey and Lavender, or Coconut and Lime then just let me know

FILLINGS 

There are almost as many options with fillings as there are with cake, but essentially, there are three basic types; buttercream, jam and chocolate ganache.  The difference is not only the flavour, but also how they're made.  

 

For instance, nearly everyone is aware of standard buttercream mixed with some flavour of jam or preserve, but are you aware there are different TYPES of  buttercream. 

 

The one that normally springs to mind is based on "American" buttercream, made with one part butter and two parts icing sugar, then usually flavoured with vanilla.  Whilst this comes out smooth and creamy, I find it very sweet, so my "go to" buttercream is known as Italian Meringue Buttercream (IMBC).  More complicated to make, using egg whites, butter and a lot LESS sugar, IMBC is the king of buttercreams; smoooooooth, creamy, fluffy and very, very moreish.  It too, can be flavoured to suit your palette.

Most requested filling flavours are: 

  • Vanilla IMBC with Raspberry jam

  • Milk or white chocolate ganache either just as it is or flavoured

  • Lemon Curd with lemon flavoured IMBC.  

To take your filling to a totally different level, you can add other elements such as freeze dried fruit or chocolate shavings, crunchy sprinkles, scrunched oreos or other biscuit pieces.  Combinations can be limitless.
